Makes about 8 cups of collagen-rich bone broth recipe

Ingredients:

  • Bones from a whole chicken (skin and bones from a roast chicken) or beef bones (oxtail, short ribs) with not too much meat attached
  • Water to cover the bones
  • 1 cup of vegetable stock
  • Fresh herbs such as parsley or thyme
  • 2 bay leaves
  • 5 dates
  • 1 tablespoon apple cider vinegar
  • 4 garlic cloves
  • 1 onion
  • 2 large carrots
  • 1 tablespoon coconut oil
  • salt and freshly ground black pepper

Method:

  1. Place the chicken bones into a large pot, and cover with at least 4 inches of water.
  2. Add the vegetable stock, herbs, bay leaves, dates, vinegar, and garlic.
  3. In a separate pan, sauté the onions and carrots in 1 tablespoon coconut oil until the carrots are soft.
  4. Add the sautéd vegetables to the large pot.
  5. Bring to a low boil (lowest setting).
  6. Simmer for at least 7 hours ( the more, the better).
  7. Strain through a sieve, discard the solid objects and retain the broth.
  8. Season with salt and pepper to taste before serving.
